STUFFED CHICKEN BREAST

INGREDIENTS:  
1 8 oz skinless boneless chicken breast 240 g
1 cake Purity Hard Bread 1
2 finely diced green onions 2
1/2 red pepper, diced 1/2
4 Tbsp Parmesan cheese 60 mL
3 Tbsp Bacon bits 45 mL
1 tsp savory 5 mL
3 cups chicken stock 750 mL
PREPARATION:
1. Soak Purity Hard Bread overnight in chicken stock (oxo cube).
2. After hard bread has soaked, squeeze all juice from bread. break hard bread into small pieces and place in a medium size mixing bowl. add green onions, red pepper, Parmesan cheese, bacon bits and savory. Mix thoroughly.
3. Lay chicken breast on table and tap lightly with meat tenderizer to flatten.
4. Form hard bread stuffing into a ball and place in the centre of the chicken breast. Lift the edges of the chicken breast up around the stuffing, turn the chicken breast upside down, and secure with toothpicks.
5. Season with salt and pepper to taste.
6. Lay chicken breast on a greased baking sheet and place in oven at 375 degrees F for 25 to 30 minutes until the chicken breast is lightly brown.
 
Serves 1 person.
