Fish Cakes
Ingredients:
2 cups salted codfish, cooked and flaked
3 cups mashed potatoes
2 tsp. finely chopped onion
salt to taste (if fresh fish is used)
Newfoundland Savoury, if desired
Directions:
Soak salt fish overnight. Cover with fresh cold water and bring to boil for 20 minutes.
Flake the cooked fish.
Blend flaked fish, mashed potatoes, onion and spices, Add salt, if necessary.
Form into patties and dust with flour.
On hot frying pan, cook until golden brown on both sides
